Veteran Built and a side of Apple Pie

Hello!

This past Monday was Veteran’s Day and we gave thanks to our very own twenty-year U.S. Navy veteran turned sea salt harvester, Matt. Did he take the day off - no, he actually collected seawater that day to keep ahead of all of our orders. I recently asked Matt how his twenty-year military career has played a role and influenced him as a small business owner.

“Serving in the United States Navy has taught me how to think outside the box, take calculated risks, the ability to plan and think ahead and manage the day-to-day operations of Newport Sea Salt Co.”

Now is the time to do some bucket filling in the way of giving a shout-out to the United States military. I am sure you realize the challenges of small business and entrepreneurship and if it wasn’t for Matt’s dedication to the US Navy and fulfilling 20 years, having our sea salt company would be even more of a greater challenge. We are thankful for his service and the opportunities it has given our family. From living on the East Coast, West Coast to the Amalfi Coast’s la dolce vita, Matt’s service took us on adventures and met new people that a ‘normal’ civilian life may not have done. So we are thankful for all the benefits, adventures, and now our small sea salt business and we are proud to say we are veteran built. If you are reading this and are a veteran, military spouse or military family member - thank YOU for your service to our country! Also, thank you to Jessica Chaon for capturing this photo of Matt and I.

So on to that side of Apple Pie…what could be more American than serving in the military and loving apple pie?! :) Matt saw the bowl of red local macintosh apples that were waiting for our boys to eat them and asked when were we going to have apple pie?? Done. I used the salted caramel I recently made from Jane Soudah’s cookbook, ‘Delightful Desserts’ and baked the Salted Caramel Apple Pie for dessert. Our whole family so enjoyed this apple pie, that Matt has already requested it as our dessert for our Thanksgiving with our extended family. We did serve this pie warmed with a scoop or 2 of Steve’s Bourbon Vanilla and a Salted Caramel ice cream. YUM!!

Salted Caramel Apple Pie from Jane Soudah’s ‘Delightful Desserts’ Baking Book

From Jane, “Don’t undercook this pie. Make sure the crust is a deep golden brown before removing it from the oven for a crisp, buttery pie.”
My Note: In place of the Apple Cider Vinegar, I used freshly squeezed lemon juice. Also, I would definitely use granny smith apples next time as noted in Jane’s recipe. Again, I just used what we had in our kitchen. Of course I used our Newport Sea Salt delicate flaky sea salt for the top of this delicious pie!
